BERRY COCONUT GRANOLA



There's nothing (and by “nothing” I really mean NOTHING) easier than a homemade granola. Mix, bake and eat. And what's even better is, that there's no need to feel bad afterwards, because it's much healthier than store bought granola, which contains loads of added sugar and artificial ingredients. Win-win.
So make a list of your desired ingredients and go to your nearest health food store or visit farmers markets and buy them! What I personally enjoy the most when making granola is the possibility to customize the ingredients to suit my tastes AND I can make it with whatever ingredients I have on hand.
Try it sprinkled over your oatmeal bowl or yoghurt, with a splash of your favorite milk or simply take a handful (yes, just like that); and be a granola-obsessed-person with me!





BERRY COCONUT GRANOLA

makes about 3 cups


Ingredients:
  • 2 cups rolled oats (or 1 ½ rolled oats and ½ steel-cut oats)
  • 1 large banana, mashed
  • 1 ½ tsp cinnamon
  • 2 tbsp flax seed
  • 2-4 tbsp agave/maple/honey (depends on how sweet you want your granola)
  • ½ cup shredded coconut, unsweetened
  • 2/3 cup frozen berries
  • ½ - 1 cup mix of nuts/seeds (I used almonds and sunflower seeds)
  • 1 tbsp peanut butter (optional)
  • 2 tbsp chia (optional)
  • 1 tsp maca powder (optional)

  1. Preheat oven to 180°C.
  2. In a large bowl, combine all the dry ingredients.
  3. In a separate bowl mix agave, peanut butter and mashed banana until well combined.
  4. Pour the wet mixture over the dry ingredients and mix well.
  5. Carefully mix in the berries.
  6. Spread the mixture evenly onto one baking sheet and bake for 20-30 minutes or until golden brown. It can brown quickly, so make sure to toss the granola every 10 minutes.
  7. Once the granola is visibly golden brown, remove from the oven and let cool completely on the baking sheet.
  8. Store in a container or jar for up to 1 month.
